Our topic this month is EB-friendly Foods & Recipes! In this post, Tetiana Zamorska of Ukraine and mom to a young boy who lives with RDEB, shares one of her son's favorite recipes: Mashed Potato with Chicken Topping

Mashed Potato with Chicken Topping

Ingredients:
For Chicken Topping: 

  1. Chicken filet - several pieces, to be further cut into slices like beef stroganoff 
  2. Medium Onion
  3. Sour cream (Smetana) (it is like a Greek Yogurt) - 12 or 15% - 3-4 big tea spoons 
  4. Sunflower oil (for a frying pan) 
  5. Salt and pepper - just a little on the meat  

For Mashed Potato:

  1. 2-3 Medium Potatoes
  2. Butter - 30-50 g  
  3. Milk (2,5% or 3.2% ) - about 1/2 glass (approx 100 ml) 
  4. Sesame oil - 1/2 teaspoon 

Instructions:
Preparing Chicken Topping:

 

1. Prepare chicken meat and onion by slicing into thin slices 

2. Season meat with salt and pepper 

3. Heat a frying pan and add sunflower oil 

4. Once the pan is hot, add the seasoned chicken and onion to the pan 

5. When the chicken is almost cooked and the onion is soft, add sour cream and let cook for several minutes. 

6. Blend the cooked meat and onion until smooth consistency 

7. Pass the blended mixture through a sieve. The consistency should be like that of ketchup. 

8. Set aside. 

Prepare Mashed Potato:

1. Mash cooked, boiled potato with butter 

2. Add milk to the mashed potato 

3. Filter the mashed potato through a sieve (to avoid any particles harmful for esophagus) and serve on a plate.  

4. Add sesame oil to the mased potato.

 

5. Before serving, we warm up the meat and potato in the microwave to achieve a good temperature. Otherwise, blending & filtering time leads to cooling of both potato and meat which makes them not as tasty and fresh as they could be.  

6. Our son likes pouring hot meat "ketchup" on the surface of potato and eat it with a fork.  

Notes: 

Although our son likes this food any time, mostly at lunch or at dinner, we have found through many years that it is the best in the evening because it is not only food, but a kind of natural dilatation of esophagus. Mashed potatoes with oil does the job perfectly for the night time. Once we started, we never had the need for balloon dilatation.  

Another hint is that unlike many oils (olive, flax seed), sesame oil does not have any smell, which our son would detect and immediately reject. We prepare meat for 2 days. Use half of it for 1 day doze and keep the 2nd portion in the fridge in the glass wide bottle. It saves a lot of time for the next day, as we only have to make potato.
